Ingredients:
- 1 white onion
- 6 tomatoes
- 3 garlic cloves
- Basil
- Thyme
- Freshly ground black pepper
- Sea salt
- Parsley
- Paprika
- Chicken broth
- 12oz rice + corn pasta
Start a pan with a bit of extra virgin olive oil. Place the chopped onion and the minced garlic cloves in it with some salt. Once the onions are brown, add some basil, parsley and thyme. Drop some chicken stock and let cook for a while. Add the chopped tomatoes. Simmer covered. Once the tomatoes are cooked, blend the whole mixture. Return to a sauce pan and add a little bit of extra virgin olive oil.
Prepare the pasta. Use a few spoonfuls of the pasta water on the sauce.
Before serving, on a different pan, place some pasta, add about a ladle of sauce, and mix for about a minute, airing the mix. Serve. Enjoy.
